I absolutely love granola! I love having it with milk, topping on yogurt or just eating it on its own for a satisfying snack. This pumpkin spice granola is just the perfect variation for Fall.
What I love most about this granola is that it toasts up so nice in the oven. Baking it on a low temperature for a long time, allows the oats to toast to perfection without burning. The pure maple syrup sweetens it so nicely and tastes especially delicious coated on the pecans!
The maple flavor, the pumpkin pie spice, the pecans…Everything in this recipe works together to make this a perfectly spiced Fall snack!!
Making Homemade Granola
Homemade granola is one of my favorite things to make! You can easily switch it up by adding different mix-ins and by changing the flavoring you add too! It can be so fun to play around with different variations and really make it your own. The process is so simple – you’ll be amazed at just how easy it is to make your own granola!
- Preheat your oven while you get all of your ingredients together.
- In a large bowl, combine the oats, mix-ins and spices – basically, mix together all of your dry ingredients.
- In a separate bowl, combine your wet ingredients – this will be the oil, sweetener and flavorings you use. Whisk them together and pour over the dry ingredients.
- Stir together, incorporating the wet ingredients with the dry – make sure it’s all coated!
- Spread the granola onto a parchment lined baking sheet. I like to use parchment because it keeps the granola from sticking to the pan when baking. AND…I will lift up the corners of the parchment and curl them in to make a kind of funnel, which allows me to easily pour the baked granola into a storage container!
- Bake the granola at a low temperature for a long bake time – low and slow will give you a perfectly golden, toasted granola! Stir the granola half way through the bake to prevent the outer edges from getting too brown.
- Allow it cool on the pan before transferring it to a storage container. Storing warm granola will cause condensation and make your granola soggy.
- Store your granola for up to 4 weeks! Enjoy this amazingly delicious snack!!

- Cook Time: 45 minutes
- Total Time: 55 minutes
- Yield: 6 cups granola 1x
Ingredients
- 4 cups (356g) old fashioned oats
- 1/2 cup (57g) chopped pecans
- 1/3 cup (45g) raw pumpkin seeds
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup (57g) coconut oil, melted
- 1/2 cup (120g) pure maple syrup (I prefer dark)
- 1/2 teaspoon maple extract
- 1/4 teaspoon vanilla extract
- 1/2 cup (64g) dried cranberries
Instructions
- Preheat oven to 275°F. Line baking sheet with parchment paper.
- In a medium bowl, stir together the oats, pecans, pumpkin seeds, pumpkin pie spice, cinnamon and salt.
- In a separate bowl, whisk together the coconut oil, maple syrup, maple extract and vanilla.
- Add the wet ingredients to the oat mixture. Stir well until all the oats are coated.
- Spread granola onto lined baking sheet.
- Bake for 20 minutes. Stir granola on baking sheet and baking for another 20 minutes until oats are golden brown.
- Add the dried cranberries and toss with the granola. Allow to cool completely on baking sheet.
- Store in airtight container for up to 4 weeks.
Notes
- Use certified gluten free oats to make this recipe gluten free.
- You can easily switch the add ins to your liking…use a different kind of nut or dried fruit or leave the fruit out. Whatever YOU like! That’s what I love about granola. It’s so versatile!
