Biscuits and gravy is the ultimate comfort food and it couldn’t be easier to make! This homemade sausage gravy on top of fluffy biscuits can be made in less than 30 minutes. It’s a classic recipe you’ll fall in love with!
Why you will love biscuits and gravy
I’ve always loved this classic recipe, but it was never really a regular on our menu growing up. It wasn’t until I married my husband (lots of years ago), that I came to appreciate it’s simple goodness. As a poor newly wed couple, we had about 3 or 4 really inexpensive, but filling meals that we relied on to get us through working our way through college. And you guessed it, biscuits and gravy was one of our go-to’s!
Creamy gravy made with a slightly spicy breakfast sausage, poured on top of homemade buttermilk biscuits is one of the most satisfying meals you can feed your family! It’s become one of our favorite breakfast recipes, and sometimes even for dinner! For a hearty breakfast, an inexpensive and quick home cooked meal, I know your family will love this delicious recipe too!
Ingredients for these classic biscuits
These are simple ingredients but are important in achieving the perfect, flaky homemade biscuits! I’m using my super easy recipe for Buttermilk Biscuits – you can find that post HERE. I’m also providing you with the recipe card below.
- All purpose flour is the base for this biscuit. Using all-purpose flour will give you a soft, fluffy biscuit
- Cold butter that is cubed will create pockets of steam in the biscuits as they bake – creating those buttery, flaky layers!
- Baking powder helps to leaven the biscuits – making them rise.
- Salt adds flavor
- Sugar slightly sweetens these biscuits, but not too much!
- Buttermilk gives this biscuit recipe the liquid to hydrate the flour and results in the most fluffy buttermilk biscuits!
Ingredients for the sausage gravy
- Sage Sausage (I like the Jimmy Dean brand) works so well in this recipe! It’s a slightly spicy sausage which is really necessary when you’re using it in a creamy gravy.
- Dry basil enhances the flavor from the sausage even more!
- All purpose flour helps to thicken the gravy.
- Milk creates the creamy gravy – use either 2% or whole milk for the creamiest gravy!
- Salt and pepper it to your liking!
You’ll also find this gravy recipe in my Kolaches Class – one of the yummy kolache variations I teach you a Biscuits and Gravy Kolache! It’s so yummy! You can find that class HERE.
How to prepare the biscuits and gravy so that you can serve it hot
I like to prepare this meal in a certain order to ensure that I’m serving everything hot! The best sausage gravy is served hot over warm biscuits. If you time it just right, everything comes together so smoothly.
- First turn on your oven and get it preheated while you prepare everything.
- Prepare the biscuits. Put them on the baking sheet and keep them in the refrigerator while you prepare the gravy. This will keep the butter in the biscuits cold – super important for achieving flaky layers!
- On the stovetop, prepare the sausage gravy. As soon as you have added the milk, put the biscuits in the oven and bake. They will bake for about 12 minutes while you finish up the gravy. Once you have the gravy finished, keep it on low until the biscuits are done baking.
- Serve immediately while everything is nice and hot!
How to make buttermilk biscuits
My Beginner Buttermilk Biscuit recipe is a great recipe for anyone just starting out in baking OR anyone that loves easy recipes! Make the best biscuits with this simple recipe!
- In a large bowl, combine the flour, sugar, baking powder and salt.
- Add the cubed butter and cut it into the flour mixture with a pastry blender – breaking the butter into smaller pieces.
- Pour the buttermilk over the mixture and stir to combine.
- Turn the dough out onto the counter and continue mixing the dough with your hands – press the dough, working it to absorb all of the flour until it comes together in one dough ball.
- Cut out your biscuits and place on a baking sheet lined with parchment paper.
- Bake until they’re nice and golden!
Making the sausage gravy recipe
A homemade gravy makes this comfort food so good – especially when poured on top of fresh biscuits! Gravy is really not difficult to make at all – you’ll be pleasantly surprised at how simple and easy it is to make!
- In a medium saucepan, brown the ground sage sausage on medium heat. Be sure not to drain the drippings from the bottom of the pan – you’ll need it for your gravy.
- Sprinkle the flour and basil over the sausage and cook for about 2 minutes, stirring it constantly.
- Next, pour the milk over the sausage mixture and stir. It will begin to thicken as you bring it to a boil.
- Add more milk if needed – you’ll find that as you let your gravy sit (even with low heat) it will thicken. You may need to add more milk to thin it – make your creamy sausage gravy how you like it!
- Salt and pepper it to your taste.
Serve your biscuits and gravy hot and with any of your favorite breakfast sides. We love adding hash browns or scrambled eggs. It’s such a warm, filling and comforting meal! I know your family will love it!

Biscuits and Gravy
Ingredients
Beginner Buttermilk Biscuits:
- 3 cups all purpose flour
- 2 Tablespoons sugar
- 1 Tablespoon + 1 teaspoon baking powder
- 1 ½ teaspoons salt
- ¾ cup unsalted butter cubed and chilled
- 1 cup buttermilk*
Super Sausage Gravy
- 1 lb. ground sage sausage I prefer Jimmy Dean
- ½ cup all purpose flour
- ½ teaspoon dry basil
- 2 cups milk 2% or whole, plus up to 1 cup (227g) more – as needed
- Salt and pepper to taste
Instructions
Prepare the Buttermilk Biscuits:
- Preheat oven to 450°F.
- In a large bowl, combine the flour, sugar, baking powder and salt.
- Add the cubed butter and cut into the flour mixture with a pastry blender or with the backs of two forks until mixture resembles coarse crumbs.
- Add the buttermilk and stir just until the liquid is absorbed and it forms a soft dough.
- Turn the dough out onto the counter and work all the dry bits into the dough with your hands until it becomes one cohesive ball of dough. Try to handle as little as possible.
- Flour the counter and roll dough out to about 1 inch thickness.
- Cut with a round biscuit cutter – do not twist (this will inhibit the rise of the biscuit). Re roll the scraps and cut out more biscuits until all the dough is used up. *To save time, cut into squares with a knife.
- Place an inch apart on a baking sheet either lined with parchment or sprayed with nonstick spray.
- Put the pan in the refrigerator to keep the biscuits cold while you prepare the sausage gravy.
- Bake for 12-15 minutes or until the edges are slightly golden.
Prepare the Super Sausage Gravy:
- In a medium saucepan, brown the sausage over medium heat – do not drain the fat.
- Sprinkle the flour and basil over the sausage and cook for 2 minutes, stirring constantly.
- Add 2 cups of milk and stir constantly. Bring to a boil. Lower the heat, stirring until desired consistency is reached – add more milk as needed to thin the gravy.
- Salt and pepper to taste.
- Serve over warm biscuits immediately.
- Enjoy!
