Apple Streusel Muffins
These muffins bake up so light and fluffy. The cinnamon apple is amazing with the brown sugar, buttery streusel topping! Topped with a vanilla glaze, you will absolutely love every bite of these muffins!
Apple season is one of my most favorite times of the year. I look for any and all ways to use seasonal fruits and apples are one of the best fruits to bake with! My mom has an apple tree and during harvest, she makes pans and pans of apple crisp and saves them in the freezer to use throughout the year. Every time we get one out and reheat it, it’s pure heaven! It’s no wonder I love these muffins so much! I’m a fan of anything apple cinnamon!
I can’t tell you how delicious these muffins are. They bake up so fluffy. The Greek yogurt in this recipe makes these muffins so moist. The streusel topping is sweet and crumbly and rich with brown sugar and cinnamon flavors. The vanilla glaze on top compliments the cinnamon flavor so perfectly.
Toss some apples with cinnamon and sugar and whatever they’re baked with, I’m a happy gal! I like to add a bit of cinnamon sugar to the apples before I mix them into the muffin batter. It makes the apple flavor really stand out.
When adding the streusel topping to prepare these muffins for baking, go heavy on the topping and press it slightly into the batter. The butter and sugars will melt together in the oven and if you get a good amount of topping on there and press it in, this will give you a nice crispy sweet crust!
Apple Streusel Muffins
Ingredients
Streusel Topping:
- 1 cup all purpose flour
- ⅓ cup packed brown sugar
- 3 Tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- 6 Tablespoons butter melted
Muffins:
- ½ cup butter softened
- ½ cup brown sugar
- ¼ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- ½ cup Greek vanilla yogurt
- ¼ cup milk
- 1 ⅔ cups all purpose flour
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
Apple Filling:
- 1 ½ cups chopped apple
- ¼ teaspoon ground cinnamon
- 1 Tablespoon granulated sugar
Vanilla Glaze:
- 1 ½ cups powdered sugar
- ½ teaspoon vanilla
- 2-3 Tablespoons milk
Instructions
- Prepare the streusel topping. Combine all the ingredients for the streusel topping. It’s easiest to mix together with your fingers. Set aside.
- Prepare the sliced apples. Mix together with the cinnamon and sugar. Set aside.
- Preheat the oven to 425°F. Spray muffin tin with nonstick spray or line pans with muffin liners.
- Prepare Muffin batter. With electric mixer, cream together the butter, brown sugar, granulated sugar and eggs. Add the vanilla and Greek yogurt, milk and mix well.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon and salt.
- Add the flour mixture to the mixer and combine.
- Stir in the chopped apples with a spatula.
- Spoon the batter into the muffin cups and fill 2/3 full. Generously sprinkle the streusel topping to completely cover the top of the batter and press down.
- Bake at 425°F for five minutes. Without opening the oven, turn it down to 350°F and bake another 16-18 minutes more. Insert toothpick or knife to check if they are done. If it comes out clean, they are ready. Allow to cool for 5 minutes in the pan and then let cool completely on a wire rack.
- While the muffins are cooling, prepare the glaze by whisking all the ingredients together. A thicker glaze will set up nicely. Drizzle over the muffins after they have completely cooled.
Notes
- These make really great jumbo muffins. Will make about 6 jumbo muffins. Bake initial bake at 425°F for 5 minutes. Then turn the oven down to 350°F and bake about 23-25 minutes.
- Vanilla Greek yogurt really is the best option for this recipe. Plain greek yogurt would work, but nonGreek plain yogurt won’t yield the same fluffy results.
