This is one of the quickest meals in my repertoire. Better yet, EVERYONE in my family loves them! A monumental victory! I love this recipe because it allows me to easily change it up by the toppings I decide to use. Using my easy homemade pizza dough, fill these rollups with your favorite pizza toppings, bake and serve with marinara sauce. No rise time!

My tip: Make extra and freeze before baking to save them for a quick after school snack!
I have a house full of boys. They like to eat. A lot. I’m constantly hearing, “Mom there’s nothing to eat. I’m staaarrrving.” Sound familiar? Having something on hand that they love is a must. That’s why when I make this recipe, I make a double batch and, before baking them, put the extras in the freezer. They can be baked later, straight out of the freezer, no thawing necessary. It’s so convenient for a busy afternoon, when kids need a snack. My older boys are able to bake these themselves. Good job boys!
I like to involve my kids in what toppings I roll in there. When I let them decide, there’s no complaining about what we’re eating. Everyone is happy! We love pepperoni, salami and mozzarella on our pizza rollups. The salami adds an extra saltiness that works together with the slight sweetness of the pizza dough and the flavors of the Italian seasoning.
The pizza dough is so easy to make. The best part – you don’t need to rise the dough at all. I told you it was quick and easy! Find my Quick and Easy Pizza Dough recipe HERE. It’s easy to make and perfect to use for homemade pizzas!
Before rolling out the pizza dough, gather all of your toppings together in an assembly line. This will help the process go faster and it’s a great way to get the kids involved. My kids love to help layer them on.
Roll out the dough in a rectangular shape. Sprinkle on the Italian seasoning and start layering on your toppings.
I LOVE this Italian Seasoning Mix! I also use it for my Parmesan Seasoned Breadsticks! Yum!
Baker’s Tip: When rolling these up, slightly lift up on the dough and tug lightly as you go. This will give you a tighter roll and prevent it from unrolling when baked. Slice them with a sharp, serrated knife to prevent smashing as you cut.
Bake until golden and bubbly!
Freeze for a quick snack!
- You can freeze these before baking and save them for an easy-to-make snack later! Simply roll them up and place on a baking sheet. Place the entire baking sheet in your freezer and allow to freeze for 24 hours. After they are completely frozen, remove them from the pan and store the rolls in a zip top freezer bag. Keep them in the freezer for up to 6 weeks.
- When baking the frozen pizza rollups, simply remove them from the freezer and bake on a baking sheet as the recipe directs. No need to let them thaw or rise!
- This is such a great after school snack! The kids can even make it themselves!
- I love making a double batch. Bake one for dinner and freeze the other for easy snacks later!

Pizza Rollups
Ingredients
- 1 Prepared Pizza Dough (see my recipe for Easy Pizza Dough)
Parmesan Seasoned Topping:
- 2 Tablespoons grated parmesan cheese
- 2 teaspoons oregano
- 2 teaspoons basil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons sea salt
Suggested Toppings:
- 5 ounces sliced salami
- 7 ounces pepperoni
- 1 cup shredded mozzarella
Instructions
- Preheat oven to 450°. Prepare baking sheet by lining with parchment and sprinkle cornmeal.
- Make my Quick and Easy Pizza Dough and allow the dough to rest while you prepare the Italian seasoning.
- Prepare Parmesan Seasoned Topping. Mix all ingredients together and set aside.
- Gather together your toppings and have them ready for assembly.
- Flour your work surface and roll pizza dough into a rectangle about 8 inches by 20 inches.
- Sprinkle Parmesan Seasoned Topping on dough. Spread the pepperoni, leaving an inch border along the top of the long edge of the dough. Spread the salami and sprinkle the shredded mozzarella on top.
- Roll up the dough, starting at the long edge nearest you. Gently lift up and tug on the dough as you tuck in all the toppings with the dough. Try to get a tight roll to prevent the dough from unrolling in the oven. When you get to the last inch of dough, pull it up over the roll and pinch the edge, sealing it to the roll.
- Cut two inch rolls with a sharp serrated knife. Place on prepared baking sheet.
- Bake for 12 minutes or until golden brown and bubbly. Serve with favorite dipping sauce.

- Get creative and use your family’s favorite pizza toppings. Make it your own!
- Plan ahead…place rollups on a baking sheet. Put baking sheet in the freezer for 24 hours. Remove from pan and place in a freezer bag to save for a quick snack or meal later. When baking frozen rollups, take directly out of freezer and bake as directed in recipe – no need to thaw. Bake temperature and time will be about the same.
