This quick and easy recipe makes a fresh peach pie filling that sets up perfectly when baked! No more runny peach pie filling!

- 1 cup granulated sugar
- 1 cup water
- ¼ cup cornstarch
- 1 Tablespoon lemon juice
- 1 teaspoon pure vanilla extract
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon nutmeg
- 4 ½ cups fresh sliced peaches
Peel, pit and slice peaches. Set aside.
In a saucepan on medium heat, combine granulated sugar, water, cornstarch and lemon juice. Whisk it constantly until it comes to a boil. It will thicken quickly, about 2-3 minutes.
Remove pan from the heat and stir in the peaches. Add the vanilla, cinnamon and nutmeg and stir to combine.
Let the filling cool completely. At that point you can add it to your prepared pie crust.
